Italian Focaccia Sandwich

I am not sure if I shared this or not but my family and I are vegetarians.

We decided to become vegetarians for health reasons.

Eating healthier and taking better care of ourselves.

One thing we like to indulge in is a sandwich.

Here is a meal that is super easy and delicious too.

This is not a low calorie meal for us but sort of a treat.

Panera has wonderful sea salt focaccia bread.

 

I made my ownย  basil pesto.

I don’t measure anything I just get a hand full of basil,a spoonful of parmesan cheese,a garlic clove a bit of sea salt and extra virgin olive oil.I mix this in a blender.Add enough oil to blend.

You can search and find a pesto recipe.Normally it calls for pine nuts but I leave those out.

Peel and clean a eggplant.Slice length wise.

I grilled the egg plant in a pan with a bit of olive oil.

After grilling the eggplant it is part to assemble the sandwich.

Slice the focaccia bread in half.Add basil pesto to the bottom half of the focaccia bread.

Add the eggplant on top of foccocia.

Add some tomato sauce on top of the eggplant.

I cheated here and used store bought.

But homemade is the best!

Sprinkle mozzarella cheese on top.

Then place the last cut focaccia slice on top of sandwich.

Bake in oven on baking sheet at 325 for 10- 15 minutes until cheese is melted.

Cut and serve!

This is such a delicious meal.

Served with a salad YUM!

    This does look good. My daughter wants to be a vegetarian (my 14 year old). My husband wants meat every meal though ๐Ÿ™ How long have you been a vegetarian?

    That looks so good, Anne. I’m not a vegetarian, per say, but I almost always order vegetarian pizzas and sandwiches when we go out. And I do love all vegetables..I will try it..Happy Tuesday..Judy
